The Parillo Family has been serving Upstate NY for generations, and is thrilled to now be a part of the Ghent and Chatham communities.

Chef Paul Parillo was born into the restaurant business, as his family have owned and operated Parillo's Armory Grill, La Cucina Di Parillo, L'Ultimo and Mary Jane's Market in Amsterdam, NY over the past four decades.

Following in his family's footsteps, Paul gained experience in all of the hometown family businesses. He then worked his way through the culinary ranks at Tribeca Grill and Corporate Chef Catering in NYC, and eventually as Executive Chef at Crossroads Brewing Co. in Athens, NY.

In 2017, Paul and his wife Lindsay started their own catering and food truck business, Edible Roots Food Company.

After years of preparing delicious locally sourced food at weddings, private events and corporate gatherings, Paul and Lindsay have transformed their catering business into Chatham Provisions.

They are now pleased that their loyal customers and new friends alike have a common place to visit, and that they can continue to enjoy the Parillo Family's comfort cuisine.
